The now memories are from the late nights my dad would get home and the four of us children would have an abundance amount of energy. This was at the time the only thing he could cook without burning. But when it was just the three of us, dad, my brother, and i, this was our first dish we made as a family. 
About a year after my parents divorce my dad was finally learning how to feed us homemade food instead of fast food or something from a restaurant. I love rice and fried rice is even better. So I begged my dad for months to let us try and make some at home. Once he gave in it was a constant time of experimenting, laughing in the kitchen, and making a mess. Any time that this dish was made it felt as though the three of us were in just this little universe and nothing could take that away. 

For Special Fried Rice you will need:
2 3/4 cups of water
1 1/2 cups white rice
3 tablespoons vegetable or wok oil
2 eggs, beaten
2 cloves garlic, chopped
2 inches fresh ginger, minced or grated
1/2 cup tamari, dark aged soy sauce

But we never followed it directly as it gives you because as children we just wanted to put in what tasted good and looked good. So it was all based on how the rice looked and tasted. I was always the taste tester never my older brother, dad would save that specifically for me, it became a tradition when making the fried rice.
