For every birthday, mine or another family member, my grandmother would make a cherry chocolate cake with chocolate fudge icing. Sometimes one of us would help her make it. She always made it the day before because she says that it is one of the things that needs to set overnight to be better. The recipe is simple and just involves a chocolate cake mix and a can of maraschino cherries, The icing is a bit more complex using chocolate butter, sugar and milk.

I don't remember the exact recipe.

make the chocolate cake mix like regular but put in just a bit less water than it says to. probably less than 1/4 cup.
add the entire can of cherries to the cake and mix it up.
bake according to the directions on the box.
mix together in a pan on low heat the sugar, milk, butter, and chocolate, I don't know the exact amounts, but ~1 cup sugar, 1/2 cup milk, 1/2 stick of butter, and half the bag of semi sweet chocolate chips.
spread the icing on the cake and let it cool completely then refrigerate overnight.
Serve with a scoop of vanilla ice cream.
